This very special product allows you to use garlic in an incredibly stable form. This clear vinegar packs a punch with all the properties of garlic, spice, warmth and a deep earthiness.
Use this vinegar to make a very special aioli, add 2 egg yolks and a good splash of garlic vinegar with a teaspoon of Dijon mustard, slowly incorporate a neutral oil until you have a thick emulsion season with salt and enjoy.
